While you could make this salad with grilled shrimp or some other protein, it is a perfect destination for Quick Herb and Lemon Marinated Grilled Squid with its vibrant flavors.

Serves 4

For the dressing: 

  • 1 tablespoon red wine vinegar
  • 2 tablespoons fresh lemon juice
  • 1 garlic clove, finely minced
  • 1 tablespoon fresh chopped herbs, such as oregano, chives, dill or basil, or 1 teaspoon dried oregano
  • 1/2 cup extra virgin olive oil
  • Salt and ground pepper


For the salad:

  • 1 head romaine lettuce, washed and dried (4 to 6 cups)
  • 2 medium cucumbers or 1 large English cucumber, peeled, seeded and cut into ½-inch dice
  • 1 cup (about) cherry tomatoes, cut half
  • 1/2 small red onion, sliced paper thin
  • 1/2 pound Mermaid Farm feta cheese, crumbled
  • 1/2 cup pitted kalamata olives, rinsed
  • 1 recipe Quick Herb and Lemon Marinated Grilled Squid

 

1. Make the dressing:  Combine vinegar, lemon juice, garlic, and herbs in a bowl. While whisking, add olive oil in a steady stream. Season generously with salt and pepper.

2. Chop the romaine into bite-sized pieces and add it to large bowl. Add the cucumbers, tomatoes, and red onion.  

3. Just before serving, whisk the dressing again and add enough to the bowl of salad ingredients to coat thoroughly. You will have dressing leftover for another salad. Garnish with feta and olives and squid off the grill, cut into rings.
